Meatless: a healthy zucchini casserole for a light dinner
Zucchini is the perfect vegetable for making delicious pancakes, casseroles, appetizers, and pies. They can also be used to make healthy chips.
A chef shared a recipe on Instagram for a very satisfying, tasty, and healthy zucchini casserole with cheese and eggs.
Ingredients:
- zucchini - 1 pc.
- eggs - 3 pcs.
- cottage cheese
- tomatoes
- spices to taste
- hard grated cheese
Method of preparation:
1. Dice the zucchini and tomatoes.
2. Put the eggs in a baking dish, add the cheese, zucchini, tomatoes and mix. Sprinkle grated hard cheese on top and bake.
Sprinkle with herbs before serving!
