Mackerel on a vegetable bed – the perfect chef's dinner option
Lunch is an important meal that should be nutritious and include meat or fish, vegetables, herbs, cereals, and durum pasta. A hearty lunch must be the key to a light dinner that does not overload the body.
Chef Olha Matvii shared a recipe on Instagram for the perfect lunch dish – baked mackerel on a vegetable pillow, which takes 40 minutes to cook.
Olha's secrets:
- do not cover vegetables with foil – they will stick and spoil
- Bake the fish for no more than 40 minutes to keep it juicy and not overdried
- do not salt the fish too much
Ingredients:
- mackerel – 1 pc.
- onion – 1 pc.
- lemon – 1/2 pc.
- tomato – 1 pc.
- dill, parsley – 2 sprigs
- butter – 20 g
- salt, pepper – to taste
- paprika – a pinch
Method of preparation:
1. Gut the mackerel well, cut along the ridge, remove all the bones, ridge, cut off the fins.
2. Wash the vegetables.
3. Cut the tomatoes and onions into thin half rings.
4. Wash the greens and chop them finely.
5. Mix all the vegetables and season with salt.
6. Wash the lemon, peel it, and cut into thin slices.
7. Put parchment on a baking sheet, put the vegetables and lemon.
8. Put the fish on top, be sure to put the meat up, season with salt and pepper, sprinkle with paprika, and add lemon.
9. Be sure to put butter on the fish.
10. Cover with parchment and put in a preheated oven for 40 minutes at 180 C.
