How to prepare Zinkiv sausage with an unusual ingredient
Homemade sausage is a delicious meat dish with spices and garlic. The most important thing when making sausage is to choose the right meat and bake it properly so that it is not overdried.
Culinary expert Yevhen Klopotenko shared a recipe for homemade Zinkiv sausage, which is characterized by blood and spices, on his website.
It is worth noting that Zinkiv sausage is included in the list of the intangible cultural heritage elements of the Khmelnytskyi region.
Ingredients:
- pork shoulder - 2 kg
- salt - 1 tsp
- freshly ground pepper - 1 tbsp
- pork intestine - 3 g
- garlic - 3 heads
- cold water - 1 cup
- pork blood - 1 cup
Method of preparation:
1. Chop the meat, add salt, pepper and squeezed garlic, and mash thoroughly for 10-15 minutes to make the mixture dense, like minced meat.
2. Then pour ice water into the cooked meat and mix again. The water should be completely absorbed.
3. Be sure to clean and rinse the intestines several times to make them odorless. After that, cut them into pieces 40-60 cm long.
4. Fill them with meat and tie the ends with culinary or ordinary thread.
5. Brush the sausage with blood, place on a baking sheet and bake for 3 hours.
Cook's tip: take the sausage out of the oven every 20 minutes from the start of cooking and brush it again with blood on both sides. To make the sausage black and not too dry, repeat this 5-6 times.
The dish is best served cold.
