Meringue roll is an ideal option for a delicious, light and festive dessert that is very easy and quick to prepare at home. All you need to do is choose a good recipe and follow the right proportions.

Cook Khrystyna shared a recipe for a delicious homemade meringue roll with cherry filling, which takes only 30 minutes to prepare, on Instagram.

Ingredients:

Merengue:

  • egg whites - 5 pcs.
  • salt - a pinch
  • sugar - 200 g
  • starch - 1 tsp.

Filling:

  • sour cream - 370 g
  • powdered sugar - 150 g
  • sour cream thickener - 1 pack
  • pitted cherries, canned or fresh - 100 g

Method of preparation:

1. Add a pinch of salt to the whites and beat with a mixer into a fluffy foam.

2. Add sugar in parts and whisk until thickened. Then add starch and whisk well again.

3. Put the meringue on a baking sheet lined with parchment, smooth it out evenly and bake at 160°C for 30 minutes. Make sure that it is crispy on top but not overdried. It is better to bake with the convection mode on.

4. For the filling, mix sour cream, powdered sugar and thickener and beat well with a blender until thick.

5. Using another piece of parchment, turn the finished meringue over.

6. Spread the filling, put the cherries on top in three rows and roll up the parchment.

6. Put the dessert in the refrigerator for 2-3 hours.
