Recipe for caramelized banana ice cream
Ingredients:
- 3 overripe medium-sized bananas, peeled
- 1/3 cup of packed light brown sugar
- 1 tablespoon of butter, cut into small pieces
- 1-1.5 cups of whole milk
- 2 tablespoons of granulated sugar
- 0.5 teaspoon of vanilla extract
- 1-1.5 teaspoons of freshly squeezed lemon juice
- 1/8 teaspoon of salt
Preparation:
Preheat the oven to 200 °C.
Cut the bananas into 1-1.5 cm pieces and place them in a baking dish with the brown sugar and butter to dissolve the sugar. Bake for about 40 minutes, stirring once, until the bananas are soft and golden brown.
Immediately transfer the bananas and caramel syrup to a blender or food processor (if you wait too long, the caramel will start to harden). Add the milk, granulated sugar, vanilla, lemon juice, and salt and blend until smooth. Chill the mixture in the refrigerator.
Remove from the refrigerator, whip quickly, and then freeze in a special ice cream maker according to the manufacturer's instructions.
Transfer to a plastic container and place in the freezer for a few hours (until hardened) so that it can be scooped out.
