How to make a zucchini cake: no need for an oven
Zucchini is a great base for making pancakes, cutlets, stews, wraps, and even a cake. The cakes for the dish are made from vegetable dough, which is complemented by a delicious juicy filling. The cake does not require long baking, so it can be quickly made for dinner for the whole family.
The idea of making a hearty zucchini cake was published on the Instagram page of food blogger Natalia (mrs.natalischka).
Ingredients:
- zucchini - 4 pcs.
- dill or cilantro - a bunch
- eggs - 3 pcs.
- flour - 5 tbsp
- salt and pepper - to taste
Ingredients for the filling:
- tomatoes - 5 pcs;
- mayonnaise - 5 tbsp.
- garlic - 4 cloves
Method of preparation:
1. Grate the well-washed zucchini on a coarse grater. Add salt and leave for 15 minutes.
2. Squeeze the zucchini mass from the juice and put it in a deep bowl.
3. Season with salt and pepper, add finely chopped herbs and eggs.
4. Mix well, then add flour and mix again. Divide the resulting mass into 4-5 parts, which will be fried in turn.
5. Heat the oil in a small frying pan.
6. Put the zucchini mixture in a frying pan, smoothing it with a spatula to make a large pancake. Fry on both sides until golden brown.
7. Mix mayonnaise and crushed garlic in a separate bowl.
8. Put the zucchini pancakes on a flat plate.
9. Lubricate each of them with a tablespoon of mayonnaise and garlic and put thinly sliced tomatoes on top.
10. Grease the last pancake with garlic sauce.
11. Before serving, let the cake sit in the fridge for an hour.
