How to make a quick cheese cream soup: step-by-step recipe
Cream soup is made from cheese, broth, and milk, and it always turns out to be hearty and flavorful.

What products are needed:
- 60 g of butter;
- 1 finely chopped onion;
- 40 g of wheat flour;
- 3 cups of chicken broth;
- 3 cups of milk;
- 30 g of grated cheddar cheese (you can use Dutch cheese).
Recipe:
1. Melt the butter in a 3-quart saucepan and add the onion, cooking it for 5 minutes. Then stir in the flour until the mixture is smooth.
2. Add the broth to the mixture, stirring, and when the contents thicken, pour in the milk and bring it to a boil.
3. Using a blender on medium speed, whisk a quarter of the soup mixture until it becomes glossy. Return the liquid to the saucepan and stir.
4. Add the grated cheese to the soup and use a whisk or a slotted spoon to help it melt. If you can't dissolve the cheese, keep the saucepan on very low heat for another minute, stirring constantly.
Note that the soup contains about 470 kcal per 100 grams. This dish is best served with croutons.
