1. Baked

Baked flounder.

Ingredients:

  • flounder (headless carcass) - 1.5 kg
  • butter - 50 g
  • vegetable oil - 20 ml
  • lemon - 1 pc
  • parsley - 10 - 20 g
  • fresh dill 10 - 20 g
  • salt, ground black pepper - to taste

Method of preparation:

  1. Rinse the fish well under running water, cut off all the fins, pat dry with paper towels and place on a platter or board with the yellowish side up.
  2. Make a few cuts across the fish at a distance of about 2-3 cm from each other and rub it well with salt and pepper on all sides, then sprinkle with juice and leave it to marinate for 20 minutes.
  3. Grease a baking sheet with oil, put the already marinated flounder in it and bake at 220 C for 15 minutes.
  4. After the time is up, take the fish out, make cuts, insert the lemon and put it back in the oven for 25 minutes.
  5. Then chop the parsley and dill, mix with butter, brush the hot fish with oil and leave it in the oven for 10 minutes, turning off the oven.

Serve the fish with vegetables.

2. Grilled

How to grill flounder deliciously.
  • flounder - 1-2 pcs
  • oil - 1-2 tbsp
  • spicy herbs (basil, rosemary) - 4-6 sprigs
  • lemon - 1 pc
  • salt, white pepper, coriander - to taste

Method of preparation:

  1. Wash the flounder well, cut off the head and gut it. Pat the inside and outside with a paper towel, then remove the black film and blood along the ridge, and cut off all the fins.
  2. Use a sharp knife to make incisions on the back and abdomen so that the skin, which will be pulled off, does not deform the carcass during cooking.
  3. Rub the fish well with spices and add herbs.
  4. Grill for about 15-20 minutes, turning it over from time to time to ensure that the fish is well cooked.

Sprinkle generously with lemon juice before serving. It is better to eat it hot.

3. Fried

Fried flounder.

Ingredients:

  • flounder - 1 pc
  • flour - 50-80 g
  • curry - 1/2 tsp
  • Salt, pepper - to taste

Method of preparation:

  1. Wash the fish well, gut it, cut off the head, peel and cut off the tail and fins, as they will burn during frying.
  2. Mix the flour with salt, pepper, and curry, and roll the fish in it well.
  3. Pour oil into a hot frying pan and put the fish in. Fry on each side for 2 minutes to make sure the fish is well cooked.

It is better to serve fish with vegetables, for example, sweet or regular potatoes, as well as vegetable salads.
