How to cook delicious cabbage soup with dried mushrooms: can be eaten in Lent
A thick cabbage soup is a traditional dish of Ukrainian cuisine. It is especially tasty and flavorful with sauerkraut, and hearty if you add cereal to the first course: millet or buckwheat. Meat in cabbage soup can be replaced with mushrooms. In this form, the dish can be eaten even during Lent.
The recipe for lean cabbage soup with mushrooms was published in one of the culinary blogs (maslyana_tm) on Instagram.
Ingredients:
- sauerkraut - 550 g
- millet - 4 tbsp
- carrots - 1 pc
- onion - 1 pc
- mushrooms (in this recipe - white) - 200 g
- potatoes - 3-5 pcs
- tomatoes - 1-2 pcs or tomato paste - 1-2 tbsp
- sunflower oil - 4-5 tbsp
- salt, pepper
Method of preparation:
1. Pour hot water over the mushrooms.
2. Prepare vegetables: grate carrots, and chop potatoes and onions.
3. Heat a frying pan with oil, fry the onion until soft, and then add the carrots. Fry until the carrots are tender.
4. Add tomato paste or tomatoes to the vegetables. Stir and fry for a few minutes.
5. Pour potatoes, millet, cabbage, mushrooms, roast, salt, sugar, pepper, bay leaves into a saucepan/jug. Cover with boiling water.
6. Cook in the oven at 180 degrees for 2 hours or boil on the stove.
