How to cook asparagus deliciously and quickly: a simple recipe
Only a few people know how to choose it and cook asparagus properly.
Yevhen Klopotenko, a chef and winner of the MasterChef show, shared his tips on his YouTube channel and explained what amazing dishes can be made with asparagus.
1. What to look for when choosing asparagus:
- color - it should be bright green
- size - no more than 25 cm
- freshness - it should not be sluggish
2. How to cook:
- First, you need to cut off the hard bottom of the asparagus. It is better to peel it so that is more tender and coarse fibers do not irritate you when eating.
- Bring the water to a boil, add a tablespoon of salt (or more to taste) and boil the asparagus for exactly 1 minute.
- Remove and transfer to ice water so that the asparagus is crispy and retains its bright color. Leave for 2-3 minutes.
- Melt the butter in a frying pan and put the asparagus in. Fry for about 2-3 minutes.
- Sprinkle the cooked asparagus generously with lemon juice and serve.
If you wish, you can add garlic or simply boil or steam it and eat it immediately, either warm or cold. This will not change its taste.
It goes well with fish, meat, and even vegetables, fruits, and berries, and, as strange as it may sound, asparagus can become most delicious dessert and pie ingredient.
A great recipe for citrus asparagus was also shared by Klopotenko.
Ingredients:
- asparagus - 300 g
- lemon - 1 pc
- salt - 1 tbsp
- butter - 20 g
- parmesan cheese - 20 g
Method of preparation:
- Wash the asparagus well, cut off the bottom, and peel.
- Add salt to boiling water and cook the asparagus for 1 minute.
- Then immediately transfer to a frying pan with butter, add lemon juice and zest, and fry for 1-2 minutes.
- Sprinkle generously with grated Parmesan before serving.
