How to cook a healthy pumpkin to please everyone: we share the simplest recipe
One of the healthiest and most delicious vegetables is pumpkin. You can cook it in different ways: bake it, grill it, and add it to casseroles, pies, salads, and soups.
The cook shared a recipe for a delicious and healthy baked pumpkin salad with nuts and spinach on Instagram.
Ingredients:
- peeled pumpkin cut into cubes
- smoked paprika, cinnamon, ground pepper, salt, olive oil
- spinach or lettuce leaves
- feta
- raisins
- nuts
For the dressing:
- 3 tbsp olive oil
- 3 tbsp. apple cider vinegar / wine vinegar
- 1 tbsp. honey
- 1 tsp Dijon mustard
- salt
Method of preparation:
1. Dice the pumpkin, put it on a baking sheet, sprinkle with spices, drizzle with a little oil and bake.
2. Mix all the ingredients for the dressing.
3. Put the spinach on a platter, top with the pumpkin, cheese and drizzle with the dressing. Sprinkle with nuts and raisins and serve.
