Despite the fact that sauerkraut is a very simple vegetable dish, it has a lot of fans. This appetizer perfectly complements a festive table or any daily meal. But to make it really healthy, sauerkraut should be cooked using a special technology.

Media nutritionist Natalia Dubovyk shared a simple recipe for sauerkraut exclusively for OBOZREVATEL. It contains no sugar or other sweeteners. The expert also advises adding anise seeds to spice it up.

Recipe for healthy sauerkraut from Natalia Dubovik

Ingredients:

  • cabbage - 10 kg
  • ordinary neodized salt - 180 g
  • carrots - 2 pcs.
  • anise seeds - 5 tablespoons.

The method of preparation:

1. Chop the cabbage with a knife or a special device.

2. Actively crush the vegetable with your hands to make it juice.

3. Gradually add salt while continuing to massage the cabbage.

4. Add grated carrots, and anise seeds and mash again.

5. Put the cabbage tightly in a bowl, cover it with whole cabbage leaves, and put a weight on top. It's a good idea to place wooden spoons or spatulas all around the diameter of the cabbage. This is done to allow air to escape and make the fermentation process faster.

6. Leave the cabbage for 2 days at room temperature (you need to release air every day). On the third day, you can put it in the refrigerator to speed up fermentation.
