How long to marinate meat for barbecue: sharing the right technology
The flavor of the barbecue depends not only on the marinade components but also on how long the meat is marinated. Marinate in completely different ways: a day, a night, or just a few hours. Therefore, you need to understand how to do it correctly.
Food blogger Olha Skavronska (cooking_by_olya) shared all the nuances of marinating meat for the barbecue on her Instagram page.
1. To make the barbecue really tasty, the meat must be chilled, not frozen.
2. Fresh and young meat can be simply salted and peppered – this will be enough. But if you want to give the meat a rich flavor and unusual taste, use a marinade.
3. Chicken can be marinated for only half an hour, and pork, beef, and lamb for about 2 hours.
4. Older meat or meat that you are unsure of the quality of should be marinated longer. This will soften the fibers and make the kebab more juicy.
5. Use ingredients that have antibacterial properties, such as onions, in the marinade.
6. The minimum marinating time for chicken is 2 hours, pork – 4 hours, beef and lamb – 6 hours.
7. You can marinate meat at room temperature. But if you plan to marinate the meat for more than two hours, it is better to put it in the refrigerator.
8. Do not marinate meat in aluminum containers. It oxidizes the food and makes it poisonous. It is best to prepare a clay, glass, or enamel container.
