Homemade yeast bread without long kneading
If you don't have enough time to knead bread, you can easily do without it quickly. All you need to know is what kind of water to use for the dough and what to do to prevent it from sticking together.
Arecipe for yeast bread without long kneading was shared by popular Ukrainian chef Volodymyr Yaroslavskyi (yaroslavskyi_vova) on his Instagram page.
Ingredients:
- flour - 400 g
- salt - 1 tsp
- dry yeast - 1/3 tsp
- water - 300 ml
- flour or crushed oatmeal - 50-70 g
- parchment
- cast iron saucepan
Method of preparation:
1. Mix the flour, salt, and yeast in a large bown.
2. Pour in room temperature water and knead the dough quickly, about 1 minute. Cover the dough with plastic wrap and leave it in a warm place for 12-16 hours.
3. Put parchment on the table. Add flour or oatmeal for dusting.
4. Carefully take out the dough and fold it into an envelope - one side in and the other out. Do the same across - fold the upper side of the dough to the middle and pull the lower side to the middle. Each time, press the dough a little to make it "stick together".
5. Remove the remaining flour from the parchment and place the dough seam-side down. Cover with a towel and let rise for 2 hours.
6. After 30 minutes, turn on the oven, put a cast iron pan with a lid in it and heat it to 250 degrees.
7. Put the bread in and bake for 30 minutes and then another 20 minutes uncovered.
Expert tip:
To speed up preparation of the base, use warm water (no higher than 39 degrees). In this case, the dough should be left not for 16 hours but only for 3.5 hours.
