Homemade Rassolnik: cooking secrets and a successful recipe for a delicious dish
Home-style Rassolnik is a delicious first course that is prepared in each family in its own way, just like borscht: with or without meat, rice, barley, millet, beans and pickles.
Food blogger Oksana Bilinska (oxana_bil) shared a recipe for a rich Rassolnik with barley and meat on her Instagram page.
Ingredients:
- meat on the bone
- water - 3 liters
- onion - 1 pc
- carrots - 1 pc
- pickled cucumbers - 200 g
- tomato paste - 1 tbsp
- cucumber brine - 100 ml
- potatoes - 2-3 pcs
- barley - 100 g
Method of preparation:
1. Boil the barley in salted water until tender.
2. Pour water over the meat separately and add the broth. Cook for about 1 hour, constantly skimming off the foam.
3. Chop the onion and carrot. Fry until golden brown.
4. Chop and add cucumbers, tomato paste, cucumber brine to the vegetables and simmer for 5-7 minutes.
5. When the broth is cooked, take out the meat and cut it into pieces.
6. Chop and add the potatoes to the broth, add the meat, roast and boiled barley. Stir and cook for 10 minutes.
7. Add salt and herbs. You can turn off the heat and remove the dish from the stove.
Secrets of a successful Rassolnik:
- Wash the cereal in advance and soak it in water for a while.
- Do not spare the brine - this ingredient will give the soup a slight sourness and piquancy.
- Add pickles after the potatoes, otherwise the vegetable will remain hard.
- After cooking, the Rassolnik needs time to brew, even 30 minutes is enough. This way, the flavor of the dish is revealed to a great extent.
