Ingredients:
- pork shoulder - 1 kg
- pork belly - 400 g
- porcini mushrooms - 100 g
- milk - 100 g
- ice - 12% of the weight of minced meat and spices
- natural pork intestine - 2.5 g
- spices - coriander, pepper, dry garlic
- salt - to taste
Method of preparation:
- Clean 500 g of pork shoulder from fat well.
- Cut into cubes, add spices and mix.
- Pass the remaining meat through a meat grinder twice.
- Wash the mushrooms well, cut them into cubes, chop the onion, and fry them together until golden brown.
- Then add them to the minced meat and mix.
- Break the ice well and add it to the minced meat, stir and add a little spice to taste.
- Be sure to refrigerate the finished minced meat for a while so that is elastic and the sausages are tasty and juicy.
- After the time has elapsed, add the pieces of shoulder that you prepared earlier to the minced meat, mix well and fill the intestine evenly, tie it up and make sure to pierce it with a toothpick so that everything is evenly fried.
- Put it on a baking sheet, brush with oil, and bake it until it's done for about 40-50 minutes or grill.
