Green borscht without nettles: what to replace the popular ingredient with
Green borscht is a delicious dish made with potatoes, eggs, and the most important ingredient - nettles. However, if you don't want to make the dish with them, add spinach or quinoa, for example.
Nutrition expert Lana Fore has shared a recipe for a delicious green borscht, in which the main ingredient is fresh and healthy spinach, on her website.
Ingredients:
- water - 1.5-2 liters
- fresh spinach - 100 g
- potatoes - 2 pcs
- leeks or onions - 1 pc
- eggs - 2 pcs
- pickled beets - 120 g
- carrots - 1 pc
- parsley root - 20 g
- butter - 10 g
- green onions - 1-2 stalks
- garlic - 1 clove
- sour cream - 30 g
Method of preparation:
1. Wash and dice the potatoes, parsley and carrots.
2. Wash and dry the spinach.
3. Cut the leeks lengthwise and rinse well.
4. Put the chopped vegetables in a saucepan, add the sour cream, pour in a little water and simmer over low heat for about 5 minutes. Add the chopped leeks.
6. Cook hard-boiled eggs.
7. Chop the pickled beets and add them to the pot with the potatoes. Season with salt and pepper, pour in water and cook for 15 minutes, covered.
8. Cut the spinach leaves into strips, add them to the boiling borscht, cook for about 1 minute and remove from the heat.
9. Cut the green onions into rings, grate garlic, and add everything to the saucepan together with butter.
10. Cover the borscht and let it stand for a while.
Serve with fresh herbs, sour cream and eggs.
