Green borscht with nettles: a pearl of eastern Ukraine
Borsch is an authentic Ukrainian dish that is prepared differently in each region of the country. There are several types of borscht, but one of the most popular is green borscht with nettles.
This dish is most often prepared in eastern Ukraine. Food blogger Yulia Senich shared her recipe for green borscht with nettles on Instagram.
Ingredients for the broth:
- Potatoes – 3-4 pcs
- Pork ribs – 400 gr
- Onion – 1 pc
- Carrot – 1 pc
- Bay leaf
- Peppercorns – 4-5 pcs
- Garlic – 1-2 cloves
Ingredients for frying:
- Onion – 1 pc
- Carrots – 1-2 pcs
- Tomato – 400 ml
- Oil
Additional ingredients:
- Nettle – 2 bunches
- Sorrel – 2 bunches
- Boiled eggs – 3-4 pcs
The way of preparation:
1. For the broth, put the peeled onions, carrots and garlic in a dry saucepan. Fry until golden brown.
2. Add the meat and cover with water. Add bay leaf and peppercorns.
3. Prepare the roast. Grate the carrots on a coarse grater, chop the onion, and fry it together with the carrots in enough oil until golden brown.
4. Add tomato, salt and pepper.
5. Stir the broth periodically and skim off the foam. When the vegetables are ready, take them out and put peeled and chopped potatoes in their place. Add the roast.
6. Pour boiling water over the nettles and leave for 1 minute.
7. Drain the water from the nettles and chop them with the sorrel.
8. Boil the eggs and chop them.
9. Pour the chopped greens and eggs into the borscht.
10. Add salt, pepper and herbs.
