Flourless syrniki: what to add to the cottage cheese to keep their shape

Homemade syrniki can be made with or without flour, replacing it with semolina or coconut. In order for the syrniki to keep their shape well, you need to choose fatty cottage cheese and preferably grind it through a sieve.

The cook shared on Instagram a recipe for delicious and successful cottage cheese and ricotta syrniki.

Ingredients:

  • 100 g of cheese in a briquette
  • 100 g of ricotta
  • 1 egg yolk
  • sweetener/sugar
  • 2 tbsp. semolina/1-2 tbsp. for powdering
  • vanilla/vanilla sugar

Method of preparation:

1. Mix two kinds of cottage cheese, egg yolk, sugar, vanilla sugar and semolina, mix.

2. Sprinkle the board with semolina, put the curd mixture and use your hands to form a sausage and divide into equal parts. Roll in semolina and form syrniki. For better frying, put them in the freezer for at least 30 minutes.

3. Fry the syrniki in a well-heated frying pan. Fry for 3-4 minutes on each side over medium heat under a lid.
