Our grandmothers used to make eggplant caviar in this way. The caviar is based on eggplant and tomatoes, as well as spices to your liking. You can easily prepare the dish in one frying pan. It turns out to be a complete appetizer, as well as an addition to toasts or croutons.

An authentic recipe for eggplant caviar.

Ingredients:

  • eggplants - 600 g
  • tomatoes - 2 pcs.
  • onions - 2 pcs.
  • salt, pepper
Recipes with eggplants.
  • apple cider vinegar - 0.5 tbsp
  • olive oil
  • parsley

Method of preparation:

1. Wash the eggplants and make punctures in each of them. Put them on a baking sheet, brush with olive oil and bake in the oven for about 1 hour. Then cut and cool them.

2. Dice the onion and fry in olive oil until soft.

3. Peel the tomatoes. Cut into cubes. Add to the onion. Season with pepper.

3. Remove the flesh of the eggplant and chop with a knife. Add to the vegetables.

4. Add salt, vinegar, and olive oil. Simmer until all the liquid is removed. Then put in the refrigerator.

5. Serve with parsley.
