Dukkah: what is it and how to cook Egyptian seasoning at home

Dukkah is a flavorful mixture of nuts, various spices, and aromatic herbs that came to us from Egypt. It is usually consumed with flatbread or fragrant bread and olive oil.

It is either very difficult or impossible to buy this seasoning ready-made in Ukraine. But you can easily make it yourself at home. Pani Stefa's blog explains how to do it correctly.

Ingredients

  • Hazel – 60 gr
  • Pistachios – 60 gr
  • Sesame seeds – 8 tbsp
  • Coriander seeds – 4 tbsp
  • Cumin seeds – 4 tbsp
  • Fennel seeds – 2 tbsp
  • Black peppercorns – 2 tbsp
  • Thyme – 4 tbsp
  • Smoked sweet paprika powder – 2 tbsp
  • Sweet paprika flakes – 1 tbsp
  • Lightly spicy paprika such as Aleppo – 1 tbsp
  • Isot (Turkish dried paprika) – 1 tbsp
  • Fine sea salt – 2 tbsp

1. Weigh out all the ingredients in separate bowls – nuts separately, seeds, black pepper separately, thyme separately, and paprika separately.

2. Fry the nuts in a dry frying pan, stirring constantly.

3. Fry the sesame seeds in a frying pan, stirring constantly, until golden brown and divide into two equal parts.

4. Heat the cumin, fennel, coriander, and black pepper together in a frying pan until lightly crackling.

5. Leave everything until it cools down completely.

6. Now it's time to grind and mix everything. The degree of grinding can be adjusted as desired. Only one-half of the sesame seeds are ground.

7. Add salt and the other half of the sesame seeds.

8. Put in a container with an airtight lid.
