Sponge cake:

  • sugar - 70 g
  • eggs - 2 pcs
  • flour - 50 g
  • corn starch - 20 g
  • lemon - 0.5 pcs

Soaking:

  • water - 75 ml
  • sugar - 15 g
  • lemon juice - 1.5 tbsp

Custard and mousse layer:

  • milk - 300 ml
  • sugar - 90 g
  • cream - 150 ml
  • eggs - 1 pc
  • corn starch - 20 g
  • vanillin - 5 g
  • gelatin - 8 g

Strawberry jelly:

  • strawberries - 500 g
  • strawberry jelly - 2 packages
How to make a delicious strawberry pie.

Method of preparation:

  1. First of all, make a sponge cake: beat 2 egg whites with a pinch of salt, add two yolks and sugar.
  2. Add lemon zest, flour and starch and mix thoroughly and gently.
  3. Put the dough into a mold and bake at 170 degrees for 20-25 minutes.
  4. For the mousse, pour the milk over the gelatin and let it swell.
  5. In a separate bowl, beat the eggs well with sugar, vanilla and starch.
  6. Boil the milk well and add it to the egg mixture, stirring all the time to prevent anything from burning. Then pour the egg-milk mixture into the remaining milk and cook until it thickens.
  7. Add the prepared gelatin and mix well. Cover the cream with cling film and let it cool and set.
  8. For the soaking, mix lemon juice, water, and sugar.
  9. Cut the cakes, pour the mixture over, and leave for 20 minutes.
  10. When it has completely cooled, whip the cream well and add it to the mixture and stir everything. The mousse is completely ready.
  11. Put it on the soaked cakes, cover with cling film and refrigerate for 30-40 minutes.
  12. After the time has elapsed, put the chopped strawberries on the frozen mousse, cover with cling film again and refrigerate for 15 minutes.
  13. For the jelly, dissolve the jelly in water according to the instructions on the package, stir well, and pour it over the pie.
  14. Cover with cling film and refrigerate overnight.
