Not only a variety of vegetables can be preserved for the winter. It's delicious to combine them with mushrooms. This will make a delicious appetizer that will be a great addition to the festive table.

The idea of preparing a canned salad with mushrooms and vegetables for the winter was published on the Instagram page of food blogger Kateryna with the nickname katiawlodarz. Peppers, onions, and carrots go very well with mushrooms.

Ingredients:

  • champignons (small) – 1.5 kg
  • bell pepper – 1 kg
  • onion – 0.5 kg
  • carrots – 2-3 pcs.

Method of preparation:

1. Wash the mushrooms. If large, cut into 4 or 6 pieces (there should be large pieces). Cook for 10 minutes.

2. Wash the bell pepper and cut into strips.

3. Peel the onion, and cut it into half rings.

4. Peel the carrots and grate them on a coarse grater (or Korean carrot grater).

Ingredients for the marinade:

  • sugar – 200 g
  • water – 100 g
  • salt – 1 tbsp
  • vegetable oil – 1 cup
  • vinegar – 150-200 g

Method of preparation:

1. Bring the marinade to a boil.

2. Add boiled champignons, chopped pepper, onion, carrots.

3. Cook over low heat for 10 minutes.

4. Put the salad in jars.

5. Sterilize for 10-20 minutes.
