Pumpkin is exactly the kind of product that can be used to make a lot of autumn dishes. And even thin pancakes. They are very tender, sweet and orange. Any favorite filling will do.

The idea of making sweet pumpkin pancakes was published on the Instagram page of food blogger Anastasia with the nickname anny.cooking .

Ingredients:

  • eggs - 2 pcs.
  • sugar - 1 tbsp
  • salt - 1/3 tsp
  • pumpkin puree - 200 g
  • cinnamon - 1/2 tsp.
  • liquid vanilla (or vanilla sugar/vanilla bean) - 1 tsp.
  • flour with a slide - 4 tbsp.
  • baking powder - 1/2 tsp.
  • oil - 3 tbsp
  • warm milk - 350 ml

Method of preparation:

1. Pre-bake the pumpkin, beat the pulp with a blender into a puree.

2. Mix eggs, sugar, salt, pumpkin puree, cinnamon and vanilla with a whisk.

3. Add flour, baking powder, mix again and, gradually pouring in warm milk, knead the liquid delicate dough.

4. For the first frying, grease the frying pan with a drop of oil and wipe it with a napkin. Fry the pancakes.

5. Serve these sweet, flavorful dessert pancakes with cottage cheese filling or eat them plain.
