Creme brulee with pumpkin: how to cook a familiar dessert in a new way

Crème brulee is a delicate mousse dessert. It is prepared on the basis of a creamy mixture. In the fall, it is worth adding pumpkin. It combines very well with the texture of all the ingredients and makes the dish not only tasty but also very healthy. You can simply eat it with a spoon from the bowl.

The idea of making pumpkin creme brulee was published on the Instagram page of food blogger Valeriy Ponomar (ponomar_valeriy).

Ingredients:

  • pumpkin puree - 1 tbsp
  • cream - 33% 300 ml
  • eggs - 4 pcs (yolks)
  • sugar - 30 g + 1 tbsp
  • vanilla sugar - 10 g
  • cinnamon - 1 stick
  • orange zest - 1 tsp
  • cane sugar - 1 tbsp (for the crust)

Method of preparation:

1. Bake the pumpkin in the oven for 30 minutes at 200 degrees.

2. Heat the cream and remove from the stove, add sugar, vanilla sugar, cinnamon and orange zest, cover and let it brew for 20 minutes.

3. Mix the egg yolks with the remaining sugar, being careful not to foam, then add the pumpkin puree.

4. Bring the cream to a boil and remove from the heat, gradually add the yolks, stirring constantly.

5. Pass the resulting mass through a sieve, removing the zest and possible lumps.

6. Pour into the baking molds 3/4 full, place on a baking sheet and fill it with boiling water to the level of filling the molds. Be very careful not to let the boiling water get into the molds.

7. Bake in the oven in a water bath for 20-25 minutes, the time depends on the desired thickness of the cream.

8. Let it cool at room temperature, then refrigerate until it is completely set.

9. Sprinkle with sugar in a layer of 1-1.5 mm and melt with a burner. If you don't have a burner, you can melt the sugar in a frying pan and then pour it on top.
