Cookies with jam, like a grated pie: a recipe for successful shortbread dough
The classic grated jam pie can be prepared in a slightly different way, namely in the form of cookies. The recipe remains the same, but the shortcrust pastry will need to be made a little thinner.
On her Instagram page, food blogger Daria Vistovska, with nickname vistovska_daria, shared a recipe for cookies with jam that look like grated pie.

Ingredients:
- flour - 420 g
- butter - 200 g
- sugar - 250 g
- vanilla sugar - 10 g
- eggs - 2 pcs
- baking powder - 10 g
- salt - a pinch
- jam
Shortbread cookies like grated pie
Method of preparation:
1. Soft butter mixed with sugar, vanilla sugar and salt. Mix with a whisk.
2. To the resulting mass add the eggs, continuing to beat.
3. Add the flour and baking powder. Knead the dough and divide it into 2 parts (smaller and larger). Wrap each of the parts in plastic wrap: put the smaller one in the refrigerator and the larger one in the freezer for 30 minutes.

4. Then roll out a smaller portion of the dough and place it on parchment.
5. Brush with jam and grate the frozen dough on top.

6. Bake for 25-30 minutes at 180 degrees.
