Ingredients:

  • Milk chocolate - 70 gr
  • Milk - 50 gr
  • Cream 33-36% - 100 ml
  • Gelatin - 5 grams
  • Milk 25 grams
  • Instant coffee - 540 ml

Ingredients for chocolate ganache:

  • Dark chocolate 56% - 80 g
  • Cream 33-36% - 70 ml

The way of preparation:

1. Pour 25 ml of milk over the gelatin and leave to swell.

2. Add 50 ml of milk to the chocolate, heat, add coffee, and stir until a homogeneous emulsion is formed.

3. Melt the gelatin in a convenient way and add it to the chocolate mass. Mix well and cool to 35 degrees.

4. Whip the chilled cream to medium peaks and add the chocolate mixture. Mix well.

5. Wrap a 16-cm diameter cooking ring in cling film and pour the mixture into it. Put it in the freezer until it freezes.

6. Prepare the chocolate ganache. Combine the chocolate with the cream and put it in a water bath until the chocolate melts. Stir until smooth.
