Chicken tabaka: how to cook a Georgian culinary masterpiece in a frying pan

If you're tired of ordinary chicken, we strongly recommend that you cook it according to this recipe. In this case, you will have an unusually tender and juicy chicken with a crispy crust on your table.

Food blogger Olga Ryabenko shared her recipe for pan-fried tabaka chicken. On Instagram, she also shared how to cut the chicken correctly.

Ingredients

  • Chicken - 2-4 pieces
  • Adjika - 4 tbsp
  • Garlic - 1 pc.
  • Lemon - 2 pcs
  • Swan salt - 1 tsp
  • Paprika - 1 tsp.
  • Oil - 80 ml
  • Salt and pepper
  • Pepper
  • Butter - 50 grams

The method of preparation

1. Cut the chicken on the breast, cut off the third phalanx of the wing, tail and excess skin.

2. Break the joints on the legs and breast and press well. Do not beat off.

3. Season with salt and pepper, pour over ½ lemon juice and leave to marinate for 30 minutes.

4. Prepare the marinade sauce: mix the chopped garlic, all the spices, lemon juice and oil.

5. Pour 30 ml of oil into the frying pan and heat well.

6. Put the chicken skin side down and fry under the press for 7 minutes. Then turn over, press again and fry for 7 minutes.

7. Turn over, brush well with the marinade. Put oil in the frying pan. Fry without a press for 2 minutes.

8. Turn over again and brush the other side with the marinade. Fry for another 2 minutes.
