Angel sponge cake: Liza Hlinska shared the secrets of the perfect texture
The perfect sponge cake is fluffy, tender, and flavorful. But many people make it too hard. Therefore, it is worth following a clear cooking technique. To make an exquisite festive dessert based on such cakes, you can combine fruit, jelly, and delicate butter cream
The idea of making the Angel Fruit Sponge Cake was shared by the famous Ukrainian pastry chef Liza Hlinska on her YouTube channel.
Ingredients for the English sponge cake:
- sugar - 100 g
- protein - 150 g
- flour - 60 g
- corn starch
Method of preparation:
1. Preheat the oven to 165 degrees.
2. Whip the egg whites into a foam, gradually adding sugar until stable peaks.
3. Mix flour and starch. Add to the protein using a sieve and mix.
4. Cover the bottom of the mold with foil. Put the dough in and put it in the preheated oven.
5. Bake for 25-30 minutes.
6. Set aside the sponge cake to cool completely. Wrap in foil and leave for 8 hours at room temperature.
Ingredients for the impregnation:
- water - 80 ml
- sugar - 50 g
- coconut liqueur - 30 ml
Method of preparation:
1. Mix all ingredients together, boil, cool.
Ingredients for the curd cream:
- cottage cheese - 250 g
- condensed milk - 100 g
- cream (fat content not less than 30%) - 50 ml
- soft butter (82% fat content) softened - 180 g
Method of preparation:
1. Put the softened butter in a food processor, and beat until the mass becomes white and thick.
2. Beat cream, condensed milk, and cottage cheese with a blender. The mass should be homogeneous.
3. Combine the two mixtures.
Ingredients for lemon jelly:
- water - 30 ml
- lemon juice - 40 ml
- sugar - 50 g
- gelatin - 18 g + 90 ml of water
Method of preparation:
1. Pour gelatin with water. Set aside for 10-15 minutes.
2. Put the sugar and lemon juice on the fire.
3. Pour in the water.
4. Put the gelatin in the microwave for 10 seconds, and send it to the lemon water.
5. Put in the refrigerator for 15-20 minutes.
