A simple lobio recipe from Oleksandr Gromliuk: hearty, tasty and inexpensive. Exclusive
When you hear the name lobio, it seems that it is a Spanish or Portuguese dish. But it belongs to Georgian cuisine. Lobio has been known among the Caucasian peoples for a very long time. Traditionally, it is made from beans. To do this, they are soaked overnight and boiled.
Oleksandr Gromliuk, a participant of the reality TV show Hell's Kitchen (New Channel), suggests making lobio from canned beans.
Ingredients:
- Canned beans - 500 g
- Walnuts - 100 g
- Onions - 200 g
- Tomatoes - 200 g
- Garlic - 10 g
- Cilantro - 30 g
- Suneli hops - to taste
- Red pepper - 1 pod
- Salt, black pepper - to taste
Method of preparation:
1. Finely chop the onion and garlic and fry in vegetable oil, add the diced tomato and finely chopped pepper.
2. Add the canned beans to the vegetables and stew well.
3. Add salt, pepper, suneli hops, cilantro. Continue to simmer.
4. Pour in water or vegetable broth to make the dish liquid and simmer for another ten minutes.
5. At the end, add the chopped walnuts, stir, and you're ready to serve.
"It's important not to overblend the nuts, they should turn into crumbs, but not into a nut paste," advises Oleksandr.
