Do you want a budget-friendly, quick, and most importantly delicious dinner? Then this recipe for a flavorful vegetable casserole with chicken is just for you. You will spend a minimum of time, effort, and money on it, but you will feed the whole family. One serving of the casserole contains 340 kcal.

The recipe for a hearty dinner was published on the PureGym Recipes YouTube channel.

Ingredients:

  • shallots – 4 pcs
  • chopped garlic – 2 pcs
  • 3 tablespoons of balsamic vinegar
  • 2 tablespoons of olive oil
  • 2 tablespoons of whole-grain mustard
  • Salt and ground black pepper (to taste)
  • 4 chicken thighs without skin and bones
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 2 large potatoes for baking
  • 1 tbsp of pomegranate seeds
  • Fresh parsley for garnishing (optional)

Method of preparation:

  1. First, prepare the balsamic marinade: in a large bowl, mix the shallots, garlic, balsamic vinegar, olive oil and mustard, season with salt and pepper to taste. It is better to prepare the marinade an hour before cooking the chicken.
  2. Put the chicken thighs in a bowl and pour evenly with the prepared balsamic marinade, leave to marinate for at least an hour.
  3. Put the chopped peppers and potatoes on a baking sheet, then put the chicken thighs on them and drizzle with the vegetables. Season to taste.
  4. When the oven reaches the desired temperature of 200 °C, place the baking sheet in the oven and bake for 20 minutes.
  5. Remove and mash the potatoes with the back of a fork and return to the oven for another 15 minutes, until the chicken is well cooked and the vegetables are golden brown.
  6. Sprinkle the pomegranate seeds on top and serve with your favorite fresh vegetables. You can add herbs if you like.
