9 foods to replace sugar in desserts
Sugar is the white death. Nutritionists around the world are shouting about the need to limit its consumption. But what to do when you desperately want something sweet? The solution is simple: look for plant-based analogs.
Pastry chef and TV presenter Liza Hlinska told what can replace sugar in desserts and baked goods. On her Facebook page, she wrote a list of foods that are not harmful to health.
Honey. It can sometimes be used in baking, for granola, in sweet cereals, for pancakes and pancakes. You can also make creams, mousses, jellies with honey.
Jerusalem artichoke syrup. This sweetener can be added to the dough for pancakes or cheesecakes, as well as other baked goods. Jerusalem artichoke (earth pear) syrup contains healthy pectins and inulin, so it is suitable for diabetics. "I often prefer it," says Hlinska.
Maple syrup. This syrup is very low in calories, and dextrose gives it sweetness. Maple syrup can be used to serve cereals, ice cream, waffles, pancakes, and pancakes, and added to tea, coffee, sweet drinks, and pastries.
Agave syrup. This syrup looks like honey, but it's sweeter – it contains a lot of fructose and is 1.5 times sweeter than sugar. The syrup does not lose its beneficial properties when heated, so it is ideal for baking.
Date paste. Suitable for some types of sponge cake (for example, charlotte), muffins, muffins, sweets, sugar-free lean cream. You can make date paste yourself or buy date syrup. "Be careful! Almost all dates sold here are soaked in sugar syrup," says Hlinska.
Banana puree. In muffins and biscuits without eggs, sugar can be replaced with bananas or mashed other fruits, such as applesauce. The emphasis is on eggless biscuits because eggs won't whip without sugar.
Fruit and berry juices. These sugar substitutes are suitable for making jelly. Use tangerine, orange, strawberry, apple, and apricot juices – they contain a lot of glucose.
Stevia. This product is many times sweeter than white sugar. Stevia extract can be used instead of sugar when making cream.
Coconut sugar. This product has a high-calorie content but a low glycemic index. Coffee and tea with coconut sugar is the perfect combination.
