A side dish is not just mashed potatoes, pasta or buckwheat porridge. Any baked, stewed, and fried vegetables are perfect for meat and fish.

Glazed beetroot

  • beetroot - 1 kg
  • balsamic vinegar - 1/2 cup
  • liquid honey - 3 tsp
  • salt, pepper - to taste
  • oil
  • greens - for serving

Preparation:

  1. Wash the beets, remove the tails, wrap in foil, and bake until soft. Bake the beets for an hour or two, depending on their size.
  2. Remove the beets from the oven, cool them, and peel them.
  3. Mix balsamic vinegar and honey in a small saucepan. Heat over high heat until the vinegar has boiled down to the consistency of syrup. Remove from the heat.
  4. Cut the beetroot into slices. Put on a plate and pour the glaze on top. Sprinkle with finely chopped herbs when serving.

Brussels sprouts with lemon

Brussels sprouts
  • fresh Brussels sprouts - 500 g
  • lemon - half
  • salt, pepper - to taste
  • oil

Preparation:

  1. Wash the Brussels sprouts, and cut them into halves. Put in boiling water for one minute. Exactly one minute – otherwise the cabbage will become too soft.
  2. Put on a greased baking sheet, and sprinkle with salt and pepper. Drizzle with a little oil.
  3. Put in the oven preheated to the maximum and bake until a beautiful brown color.
  4. When serving, drizzle with lemon juice and sprinkle with zest.

Creamy spinach

  • fresh spinach - 1 kg
  • butter - 2 tbsp
  • onion - 1 pc (small)
  • garlic - 4 cloves
  • salt, pepper - to taste
  • cream cheese - 150 g (cut into pieces)
  • cream - 1/2 cup
  • nutmeg - a pinch

Preparation:

  1. Bring a large pot of water to a boil. Put the spinach in the pot for exactly one minute, then put it in a colander and dip it in ice water.
  2. Squeeze the spinach to remove as much liquid as possible. Coarsely chop and set aside.
  3. Heat the butter in a deep frying pan, add the finely chopped onion and garlic. Add salt and pepper, cook, stirring, for 3-5 minutes, until the onions are soft.
  4. Add cream and cheese. Stir until cheese is melted and smooth.
  5. Add the spinach. Simmer over medium heat until the mixture thickens (about 7-8 minutes). Add nutmeg at the end and mix well.

Broccoli in soy sauce

Broccoli
  • broccoli - 1 head
  • soy sauce - 2 tbsp
  • garlic - 2 cloves
  • oil - for frying
  1. Wash the broccoli, disassemble it into florets, and put it in boiling water for 2-3 minutes.
  2. Put them in a colander, let them drain, then put them in a hot and oiled frying pan. Pour in the soy sauce and squeeze in the garlic.
  3. Fry over high heat until the broccoli is browned.
